Tauck, Regent or Seabourn or ????

We want to do a Baltic Cruise in 2013 but have never cruised any of the upscale cruise lines or the Tauck line. We have been on several cruises (mostly to the Caribbean and one to Greece and Turkey) and have traveled extensively in Europe on land but the requirements we have for this Baltic Cruise are:
1. Small ship cruising
2. A little more upscale experience
3. Excellent tours
4. Good food

It seems the upscale cruise lines can provide this experience. I have truly never heard of Tauck lines until my travel agent handed me the brochure. Can anyone take the time to give me a unbiased opinion. (In addition to the above questions I would love to know the ~ages of the travelers and also from basically what countries)
