Rather than converting dollars to dongs, it is much easier to draw money from an ATM using your debit card. There are ATM's near all of the stops on this tour. Bringing about $20-30 dollars, in one dollar bills, is a good idea for tipping cyclo and tuktuk drivers (Tauck does that for you, but a few extra dollars is a nice gesture). Also, if you are interested in trinkets at the tourist sites in Cambodia, dollars work best. Otherwise, it is so much easier to use the ATM and convert to local currency.
I travelled through Vietnam and Cambodia for several weeks last year - never exchanged money - virtually everyone, everywhere took dollars or euros. Make sure to have plenty of $1.00 bills, clean and not torn best. I did accumulate a few small dong as change.
