I have a question about tipping when eating out on your own in Egypt and Jordan. Do you use the currency of the country or did you use American dollars?

In countries with a freely traded currency, I think people generally prefer local currency because they don't have to exhange the dollars (paying a fee in the process) to use the funds. If you're tipping with USD, they may want only pristine and/or recent bills.
Yes, I forgot that point too. If using dollars, use new bills. We got 100 new $1s and 20 new $5s from the bank before leaving. That goes for many countries.
