I am on this sailing solo and plan to spend two days in Brussels at the beginning. I plan to take the train to Ghent as I am doing Bruges with the included tour.

Jeter55. The Centraal train station is easy to walk to from the Hotel Amigo and has an easy to understand layout opposed to Midi. You can advance purchase your tickets right from the SNCB website. Second class is fine given the short trip. Train stops/destination are in both French and Dutch. Take a couple of euro coins with you. Some of the lockers are self serve where you put the coin in and take the key and when you return you will get your euro back. They are fairly strict on the baggage size when entering the Ghent Altarpiece portion of the church. There will be lockers at the entrance que. You can purchase advance tickets online to see the altar piece and the adjacent portion of the church and this highly recommended or you will be in long ticket line. The entrance is inside the church to the left of the altar area. If you are looking for frites: Frites Atelier is the place to go and right across the street in front of. the Himschoof Bakery is a cart to buy a bag of Ghent Noses or Cuberdon. The day of the windmills, Dordrecht and the Mauritshuis can be a long day for some. If you are worried about doing too much, skip the Dordrecht tour. What ever you do, do not skip the Mauritshuis tour and dinner. The Kinderdiyk bike ride is flat with the exception of going over the canal bridges. We did not have an e-bike option.
