The Sweet Life in December

Has anyone done this trip over Christmas? Curious about the southern part of the trip and whether it might be disappointing. We are totally fine with pools and such not being open and the cooler temps (we all hate the heat) more concerned that stores and restaurants may be closed. We have my mom and our 16 year old twins for this trip.
