Remember, Tauck does this trip a lot and has been doing so for many years. They work closely with vendors and hotels/camps to tailor the experience and dining to westerners and chose places just for that reason. You are not just a bus load of tourists arriving at a randomly selected roadside diner.

It's great. You cook up each day's catch. Somedays it's warthog, other days hyena, and on the rare days it's lion.
OK, just kidding. Like almost all Tauck tours the food is great. You stay at several nice places.
