We have on other cruises. Once on the Danube with regular 10 speeds. Very level and easy along the river until we cycled up a slope to a small village for refreshments. Once in Holland on ebikes. Also level though I was surprised how heavy they. Each excursion is different though Tauck usually gives you some indication in the itinerary of what's involved. If you don't ride an actual bike regularly (stationary doesn't count) I'd recommend some practice at home.
I have biked with others river cruise lines on Danube and Bordeaux area rivers. The Tauck French Escapade trip specifically wanted to know the feedback. One agent told me it was an easy pace of about 7 miles, another told me you had to be a die-hard rider, and it was more like 20+ miles.
Looks like there are at least 3 different bike excursions on that cruise so maybe they got them mixed up. If you think you want a ride I'd sign up for it then once on the cruise talk to the cruise director and they will let you make changes that fit what you want. We've made excursion switches once on tour several times.
