We ate shrimp sandwiches for as many lunches as we could at the open air fish markets, especially the one in Bergen near the harbor. Also, near the fish market is the entrance to the Tram Railway (Floibanen) that takes you way up the hillside for a spectacular view of the harbor and ocean below There is a restaurant at the top, but its overpriced...eat below. If you want a wonderful but very expensive meal go to the Unicorn's Garden (Enhjorningen) on the promenade just outside of the Hanseatic area. Its very old (its floors slope) but its reputed to be the best food in Bergen. I'm sure your tour will cover the Hanseatic town, but you may want to go back on your own.
In both cities, walk around as much as you can and you will see wonderful architecture, stores and may stumble upon many sight that are not on your tour. Also, the canal boat tours in all of the cities you will visit are a wonderful relaxing way to spend your free time and get a different vantage point different than the bus tour provides.Stockholm has a beautiful (though touristy) old town (Gamla Stan) which is featured in the movies by Steig Lasson (The Girl With the Dragon Tatoo, et al) We also spent time walking through the Akershus Castle in Oslo and others of our group visited the Resistance museum at the same site on our free time. The Outdoor Norwegian folk museum with its stave church and cultural demonstrations is also worthwile visiting while in Oslo and is only a short busride from "downtown" where you will most likely be staying. In short its a wonderful trip. The weather may vary from extremely hot to quite cold while you are in the fjord and mountain areas. Also, you are likely to encounter rain. Enjoy
