Recommendations needed for Shore Excursions vs Bike Excursions

My husband and I leave on the 9/1/2018 departure of The Rhine, Swiss Alps & Amsterdam trip (Southbound). My husband is very active and would appreciate hearing from past travelers about their experiences with excursions in Kinderdijk, Rudesheim, and the options in Stuttgart vs Karslruhe. The Kinderdijk bike trip appears to hit the same windmill museum tour as the walking tour. We are leaning towards several of the bike excursions, only to keep us off long bus rides. We are definitely going on the tour to picturesque Jungfraujoch. All options sound enticing...Any suggestions??
