Based on my experience from 2 other cruises - happy hour with snacks starts about 5 and dinner generally runs from 6-8. It can vary a bit depending on the days tour schedule or if its a special dinner like the welcome/farewell or a dinner off the ship.
Every day you'll get whats called a Discovery Briefing talking about the next days schedule and a detailed printed schedule left on your bed.
On ESPRIT in addition to the main dining room there is a smaller dining area at the stern of the ship, on the second deck. It's enclosed and holds maybe 30 people.
Seating MUST BE MADE BY RESERVATION the day before. A more fixed menu with if I remember right two dinner choices.
