Make sure you attend some Fringe Festival shows on your free evenings. Not just the street performers- pick up some same day tickets for plays, comedies and musicals. Or go on line and buy them in advance. Everything is very close to the center of Edinburgh (mostly walking distance). Such a great opportunity to see great, talented people.
And if you see Eddie Izzard at the Balmoral, ask him how he walks in those heels! We rode in the elevator with him - I HAD to ask!
