No need to change plans for WiFi on the boat. The front desk will set it up for you. Some will use a VPN for a layer of security. If you are using cellular data then check with your carrier. We have Verizon and it’s 10 dollars per day.
Generally you can use any wifi capable devices like a smartphone, tablet, or laptop. There are procedures to do so once you get on board. You may need to take any devices to the reception desk and they can get you set up. This has changed over the years but they will get you set up.
On cruises I've taken since 2023 the daily detailed itinerary is provided online. You just need an app on your phone to read QR codes.
As to phone plan, it depends on who you use. We have Tmobile and don't have to do anything. As soon as we arrive in a new country and turn airplane mode off on our phones we get a text from Tmobile and we're ready to go. Data and texts are free (though speed might be an issue depending on the local network) and phone calls are 25 cents a minute.
